Bill was putting some stuff on and taking some stuff off of my computer a couple of days ago. In the remove programs function, all the old versions of Yulelog showed up. Since the 2008 version is installed, is it OK to remove those prior years?

Do not try to remove the old versions! They are not really there and it will delete the current version. Each time you update YuleLog to the newest version, it over writes the old version, so even though they show up in the Delete Programs list, those old versions have been replaced by the most current version.
