Every fall, I am asked to make this bread by so many people. After reading various recipes on here, I thought I would share mine.
Apple Pumpkin Harvest Bread
Ingredients
3 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 1/2 teaspoons salt
3 cups granulated sugar
1 (15-ounce) can Pure Pumpkin
4 large eggs
1/2 cup vegetable oil
1/2 applesauce- unsweetened (chunky is fine)
1/2 cup apple juice (or water but juice is better)
1 large baking apple, peeled, cored and shredded
Directions:
Preheat oven to 350°F (175°C).
Grease and flour two 9 x 5-inch loaf pans. (or just use pam spray)
Combine flour, cinnamon, baking soda and salt in large bowl.
Combine sugar, pumpkin, eggs, vegetable oil, apple sauce and apple juice in large bowl; beat until just blended.
Add pumpkin mixture to flour mixture; stir just until moistened.
Fold in shredded apples. (to make it easier, I peel an apple and then shred it using a cheese grater directly into the mixture. It allows the juice of the apple to be used as well that way.
Spoon batter into prepared loaf pans.
Bake for 65 to 70 minutes or until wooden pick inserted in center comes out clean.
Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.
This bread is extremely moist when completed. I can't give you a shelf life on it as it never makes it past a day or two here.
